Now it’s time to learn about chefs Josh Capon, Dale Talde, and Justin Smillie, who will be joining chefs David Burke, Leah Cohen and PJ Calapa on the Fort Lee Restaurant Week Tasting Tour on Tuesday, September 25 from 7:00 – 9:00 PM.

From custom dishes to television shows and hot-selling culinary books, these chefs do more than just cook. Fort Lee is excited to host them for Restaurant Week and introduce them to the culinary journey that Fort Lee offers. They will be dining at some of the favorite local restaurants and tasting the diverse cuisines offered.

These chefs have impressive resumes that will surely catch your attention. Their experiences have led to exciting careers in the hospitality industry and beyond. Meet our three remaining celebrity chefs, who need no introduction:

Chef Josh Capon

Chef Josh Capon enjoys preparing delicious food and being amazing at it. A five-time Burger Bash champion at the New York Food & Wine Festival, Chef Capon knows what it takes to make flavor come alive.

Chef Capon owns multiple restaurants in the New York City Metro Area and also hosts Spike TV’s Frankenfood – a series focused on creating innovative dishes from unconventional food concoctions. His restaurants include Lure Fishbar in NYC’s SoHo neighborhood (with another location in Miami South Beach), Burger & Barrel (B&B) Winepub in SoHo, El Toro Blanco in West Village, Bowery Meat Company, and Bistrot Leo in SoHo.

Josh Capon’s eclectic culinary empire is rooted in a year spent honing his skills through traveling the world and working alongside other distinguished professionals in France, Italy, Germany, and Spain. He incorporates lessons learned from these experiences into his own cooking techniques to deliver truly innovative flavors and dining experiences.

Chef Dale Talde

Chicago native and Top Chef alumnus Dale Talde is a chef on a mission to create unique dining experiences. Influenced by his Filipino background, Chef Talde combines Eastern and Western flavors and techniques in each of his dishes.

Chef Talde’s culinary talents are on display at his multiple restaurants in the Metro Area. These properties include the Brooklyn-based TALDE (with additional locations including Jersey City), as well as the Manhattan-based bars and restaurants Rice & Gold, Massoni, The Crown, and The Heights. He is also a vendor with multiple locations at the Grandview Public Market in West Palm Beach, Florida.

Chef Justin Smillie

Justin Smillie is the owner and executive chef of Upland in New York City. Born in California and raised in New Jersey, Smillie’s love for the outdoors directly influences his culinary approach. He incorporates as many wild ingredients and rustic flavors as possible in his flavorful dishes.

Chef Smillie’s unique culinary style was developed through working under Chef Edward Stone for two years before enrolling in the Culinary Institute of America. After completing his education, he worked at a variety of restaurants including Mercer Kitchen, Gramercy Tavern, The Standard, and Il Buco before opening his own restaurant. He is the author of the book Slow Fires: Mastering New Ways to Braise, Roast, and Grill.
